Okay, so I'm not planning on shooting anything or spying on the neighbors; I just want to see animals at night. Owls, opossums, bobcats, whatever. I'd like something lightweight and easy to use with reasonable magnification. I'd also like it to be under $500. Is this even possible? "Help me, Obi-Wan. You are my only hope."

You are in luck, and you don't even have to spend half your budget. Get the Armasight Prime 6x monocular. It's a digital unit and shows color. It can be used in the daytime without damage. Battery life is fair. Lightweight and easy to use. It's one of my favorite units and will do exactly what you're asking!
If you really want a binocular, you'll have to use traditional gen one technology, and you're paying for two intensifier tubes. The Night Owl Explorer Pro 5x will work, but won't have the resolution of the digital unit. You're still under your budget. Have fun!
