Why would the range performance differ between a tree and a deer that is standing still.

Example: Tree range 570 yds. / Deer range 300 yds.

Hi

Compared to a tree, a deer has a softer texture by virtue of its hair. The hair absorbs more of the laser signal and thus reflects less of it back than a harder surface such as the bark of a tree.
