Good Beginner Knife for Nigirizushi
Bought this to give my kid a smaller, lighter knife with which to learn to slice seafood for nigirizushi since my traditional yanagi-ba was rather long and heavy for her to control. Excellent value at its price point. See pros and cons below.
Pros:
- Good hard steel that takes and keeps an edge.
- Smaller handle suited to smaller hands.
- Light and easy to control.
- Single bevel edge is easy to sharpen.
- Materials make it easy to clean and disinfect.
- Shorter, narrower blade fits common molded blade guards.
- Fits slicer slot in my wood knife block.
Cons:
- Light handle gives a blade-heavy feel despite its thin blade.
- Left side is ground flat, instead of traditional concave grind.
- Lightweight blade requires more force on some foods (i.e. octopus) than traditional style yanagi-ba.
- Choice of materials (while practical) compromises aesthetics and "feel."
- Brand logo is deeply and sharply impressed; may require a small brush to remove food residue.
Best Used for:
- Nigirizushi beginners
- Occasional RV/tiny house sushi lovers
- Small hands or limited hand strength
