The blue lens coating on the Barska 12x50mm Porro Prism Binoculars (model CO10675) is a contrast-enhancing antireflection treatment - it doesn't extend the visible light spectrum in any special way.
For star-viewing: you may use them, but the exit pupil (~4.2mm) and 12x magnification make them less ideal than binoculars optimized for astronomy (which often have larger exit pupils and lower magnification). The blue coating won't prevent you from seeing stars, but it won't dramatically improve your low-light performance either.
