More versatile than you might expect, a traditional Japanese kitchen knife performs a wide variety of kitchen duties, from chopping to cutting. The Santoku-style blade is ideal for preparing vegetables and cutting other foods that are too large for a kitchen knife to handle. This version of the Santoku features a blade that is shorter and features blade-bending curves. The Japanese cotton handle provides a comfortable grip during any cooking task. The Santoku's traditional Japanese style blade is made from hand-forged VG-10 Damascus steel. It is also appropriate for a variety of other kitchen tasks, such as chopping, mincing garlic, or even as a rice knife.
