What is the right size for AR gunsmithing, 8 oz?

There is no right or wrong answer here, because it depends on the the job required. However, I would say that, on average, the 8 ounce brass hammer is a very good overall choice for work on most rifles and applications. And the Delrin tip really helps with nicks and scratches. And for what it is worth, it is THE best selling unit as well.
