will this co witness with cz scorpion factory sights?

It may with the low mount, however the lower 1/3 cowitness mount is AR height and will most likely not allow you to cowitness with the CZ iron sights.

Yes, it is compatible with Aimpoint H1/T1 mounts.

Do they make a medium mount for those of us who prefer absolute cowitness?

It comes with a low mount and a lower 1/3 cowitness mount, it is however compatible with Aimpoint T1/H1 mounts.

Holosun 503BU. Is this sight the same as the 503C, except no solar panel? What mounts come with it?

Yes it is. Comes with both high and low mounts. A really great sight.
