Will the Sig Whiskey3 line hold up to the recoil of a .458 Socom in an AR platform?

Yes, it should hold up. Sig tests all their scopes up to .50 BMG.

What size rings do you recommend for this scope?

1" high height rings would work for most guns. If you are mounting this to a flattop AR, you would need extra high height rings.
