would I be able to use this upper on an Ares sporting stock with the ares bolt carrier?

These will not work because they are left handed. The Ares Defense bolt system is right handed, so it would not eject casings correctly, leading to malfunctions.

Does this receiver include the bolt carrier group and charge handle ?

Bolt Carrier group is included - Mil-Spec Manganese Phosphate coated - as well as a charging Handle: Standard mil-spec.
