I am going to mount a Bushnell XRS II scope on a Remington 700 Magpul Enhanced rifle. Will the low mount leave enough clearance? 50mm objective lense

For a scope with a 50mm objective lens, you will need High Height rings.

For a scope with a 56mm objective, you will need the XX-High rings.

I have a 56mm objective, will I need high or ex-high rings?

It is also rifle specific. If you have a bolt action rifle. you could get away with highs. However you will need extra high on an AR style rifle.

what is the height from the top of the Picatinny rail to the bottom of the scope tube, or to the center of the scope tube.

The 34mm saddle heights (top of rail to bottom of ring) are as follows:

#99682 low 0.3275"
#99684 high 0.5775"
#99686 xx-high 0.8275"
