Is the grip plug just held in with friction and does it provide a waterproof seal?

The plug is rubber, and as you surmise it friction seals in only. It is quite tight, takes some rocking and pulling to remove, and I find it to be quite watertight.

Item has a great clean look for any AR that needs a grip and a trigger guard. Great feel to the grip and extra trigger room for more control. Also if your AR is missing the rear trigger guard hole this is a good resolution as it will cover the issue ...

Granted that my grip is 11 years old but the grip is melting. You touch it and it is extremely sticky and coming apart. It was great in the beginning but does not hold up for the long haul.
