This accessory for use with Signature*, Mechanical*, and Gravity* Convection Ovens is an optional accessory, but is highly recommended for improved performance. The Signature* accessory shelf allows for better temperature uniformity and faster recovery. The shelf can be used in either of the afore mentioned designs. To preserve the rounded shape of the cavity walls it is suggested that the cavity walls are not allowed to expand during heating. This will also prevent the wall from bowing when the oven is operating at maximum capacity. High capacity trays with drip trays may be used.
