Yes, The T-2 undergoes intense durability and shock testing to withstand immense forces and still hold zero. The T-2 would be the best red dot to put on that pistol due to extreme recoil and blast. I would say that you should get the P/N 200170 Low mount T-2 to attached to the rail on the barrel.
If your getting the "no mount" T-2 then the best set up would be the P/N 12358 Micro high spacer coupled with the Micro LRP mount P/N 12905.
This could be for a couple of reasons, likely, the covers/flip caps you saw at the shop are either aftermarket covers or they are fake. We commonly see Chinese fake parts made from hard plastic.
I'm not sure which exact cap you're referring too as our caps are a flexible poly-material. Unless you have one of the "bikini" covers that are made from rubber.

the lens cap can be removed by simply placing your thumb on the backside of the hinge on the cap and pressing away from the optic. it should pop off with mild effort.

It Does not, when purchasing the dot you can also get P/N 11866 SPARE T-2 Screws.
LRP mount P.N. 12905 for just the LRP mount separately via the Aimpoint Website. Same for the magnifier ring mount. yes, the flip to side mount will work as the heights on the 39MM t-2 mount and spacer will match the ring mount spacer.

When you Purchase the spacer, it will come with the screws you're mentioning. Otherwise no it does not come with the screws.
