Will the 8" case work with a Cz P10-F measuring 7.5x5.5?

You may be able to fit the firearm, but the fit will extremely tight.

I have a taurus 608 with 6,5 inch barrel, will it fit?

The overall length of your gun is 11-5/8" so you would need at least a 12" case, although I'd recommend going up an inch at least to make sure you have enough room.
