can a .44 special be fired in the .44 magnum?

Yes but don’t try the reverse. 44 special can be used in gun chambered for 44 mag but 44 mag should not be use in gun chambered for 44 special

Are these for break barrel shotguns only? How long is each insert?

The Chiappa Firearms 970387 X-Caliber Adapter Set is for SAAMI Spec break action smooth bore 12 gauge shotguns only. The inserts are 7" long.

Are these adaptors rifled?

Yes they're rifled adapters except for the12ga/ 20ga. adapter.
