Will this fit on a Winchester model 68A to attach a red dot sight

The Leapers UTG .22/Airgun to Picatinny/Weaver Low Pro Snap-in Adaptor is not compatible with the Winchester 68A unless you first find and install a .22 dovetail base to your rifle.

Will this work on the rail of a Henry AR-7? I’m trying to find a way to attach an RMR to it but unsure what mount I need or find quick detach mount.

Yes. The Leapers UTG .22/Airgun to Picatinny/Weaver mount will work with the Henry AR-7. You can use any picatinny mount to attach your RMR to this rail.

Not exactly, it is a two piece set. You would use both on a single firearm.

Will this fit dovetail grooves on a shot-gun to mount a trs-25 red-dot

Not knowing the width of the dovetail on your shotgun, I can't say if it is compatible. The product is intended to fit the dovetail on rimfire and air rifles - typically a shotgun would need some type of cross-slot to prevent the optic from moving under recoil.
