No, the silver model will never be available again as Nikon has begun discontinuing their rifle scope lines.

It says factory demo in the specifications. Does this indicate it's not new in the box but a demo model?

Yes, that is correct. I would highly recommend looking at the part number to verify that its a DEMO. Currently the only model on this page that is a DEMO is MPN: 16591-DEMO.

will this scope work with medium height scope mounts

That really depends on the exact height of the rings and the firearm they are being mounted too. But most medium height rings should accommodate this scope.
