Is this mat water and oil resistant?

It is water"resistant" not water proof as the under side is made of foam rubber which is water absorbent.

The specs say this is 36 inch by 12 in by 125 in, can this be correct? That would make it over 10 ft long!

What is the material of this gun cleaning mat and what is its thickness?

It's a neoprene fabric and it's 0.125 inches thick.
