Yes, a camera can be mounted onto the eyepiece of this spotting scope. You can use a universal digiscoping adapter or there may be specific adapter available depending on the camera. can you see targets at 1000 yds with this. If not, what's a good economical option?

Yes, you can see targets at 1000 yards with this scope. As a qualifier however, you will not see bullet strikes at that distance, even with the best spotting scopes, unless you are using reactive targets or high caliber rounds.

Would this be good for bird watching?

It would depend on how far you are from the birds. This might be a bit too powerful, it would be hard to find your target and track it as you move the spotting scope. We would recommend a 8x or 10x binocular instead unless you are viewing at a long distance.
