How high would picatinney rings need to be for this scope?

Height of the rings is completely dependent on the firearm the scope is being mounted too. Bare minimum they should be around .75-.8 inches.

Does the black model have adjustable objective ? It looks like only the silver one is AO

Both models on this page have adjustable objectives. Simmons also makes a variant without the adjustable objectives, so they just made one image to represent both product lines.
