When installing the saftey selector switch, how do you set it to get the short throw instead of the 90?

The selector barrel has detent grooves on both the right and left end. One end for 60 and the other for 90. You can swap the throw of the levers by flipping the selector barrel during installation.

Will this selector function properly with a Kingpin installed? It looks long.

Yes, it should function properly. There should be plenty of space between the safety and the Kingpin, and the Strike Selector can be orientated for short or long lever toward the rear if you have a preference. It's totally user configurable. Check out the photo in this link as a reference.
