This Unity Tactical FAST Micro S Mount is not compatible with the AEMS. We do carry the Unity Tactical FAST AEMS mount which can be found by using the link below:

Will this put the HE515GM-GR at the 2.26 height? it sits higher than the 503r or t2, so id think this would work better than the standard Unity Riser?

If the HS515GM is taller than a standard T2, then this Unity Tactical FAST Micro S Mount would be the better option to achieve a true 2.26" centerline. However, I could not find specific information regarding the true centerline height of the HS515GM without a mount and therefore cannot confirm it will sit at a 2.26" centerline exactly.

The Holosun HS515GM is known to be a little taller than the T2...will alignment be better with the micro than with the normal FAST mount?

is it gonna fit on Holosun HS503R Classic Series Red Dot Sight, 1x, 2 MOA Dot/65 MOA Ring, CR2032 Battery, Black, HS503R

The Unity Tactical FAST Micro S Mount will be compatible with the Holosun HS503R. However, this mount was specifically designed for the CompM5s, CompM5b, and Duty RDS to allow them to sit at a centerline height of 2.26". These specific optics sit slightly higher (0.40 - 0.50") than standard T1/T2 pattern optics and therefore using this mount for an optic like your HS503R will set its centerline heigh below 2.26". I would recommend using the standard Unity Tactical FAST Micro Mount to put your centerline height at a true 2.26". You can find the mount linked below:
