Review of Chef's Choice Model 416 Diamond Steel Knife Sharpener
Easy to freshen an edge quickly. Don't get too aggressive though as it cuts quick. If I need a keener edge, say on a filet knife, I finish with a ceramic then strop. Easy to use and meets 70% of my use which is kitchen work. i will go over my hunting knives soon and I used it on a filet knife to filet and skin a striper.
