Havalon knife
Exceptionally sharp. Be very careful. Hopefully the plastic handle will hold up. The replaceable blades are a great design feature. These knifes are highly recommended by other hunters. Time will tell if changing out blades in the field is difficult or not.

Piranta-Bolt Folding knife
I love this knife. The handle fits my hand it is easy to open and close and comes with replacement blades. I have used it to skin furs, fillet fish and bone deer. It has never given me a problem and when it dulls you just replace the blade. The only donwside is that it is so sharp that you need to be very carefull
