102-111 will work with Glock 19X, Glock 45, Glock 34, Glock 17, Glock 26, Glock 19.

Where 102-116 does not work for some of those models.

What does safety plunger do?

The saftey plunger on Glock triggers acts as its own safety where you cannot fully depress the trigger unless the plunger is depressed as well.

Does this trigger's center safety go flush with trigger face or shoe just before it breaks?

The center safety goes flat immediately when you place your finger on the trigger. It does not protrude until the break point. It's very lite to the touch and goes fully flat immediately.
