Which size would be best for a Burris RT 3-15x50mm scope?

The Burris Rifle Scope Breathable Waterproof Cover that I'd recommend for your scope is the large. It will fit scopes 13" - 17" in length with an objective bell size up to 61mm. A 50mm scope typically has a bell size of 52mm - 53mm.

The Burris Rifle Scope Breathable Waterproof Cover that I would recommend for your scope is the size medium. The medium fits scopes that are 10.5" to 13" in length with objective bells up to 48mm.

#626063 burris large scope cover will it fit the eliminator 19 inch scope? It says it is 17 inches but will it stretch to 19 inches?

It will not stretch that far. I am also not aware of a Burris Eliminator that is 19 inches long as the models currently offered by Burris are max 16 inches long.
