The high mount, 1.125" is the height I would recommend. MPN: A106 is for the short action while MPN: A105 is for the long action.
Because this is a direct mount that attaches to the receiver, I would highly recommend going with the high mount.

I have not heard of Christian Arms, but if you intended Christensen Arms then yes they are compatible with the Remington 700 mounts. The direct mount is ambidextrous and will fit a left handed action. With a 40mm objective, any of the heights from .885 will work, the 1" being the most common.
No, the base is made for 6-48 screws and 8-40 screws will not fit in the mount.
