Can it be used at night with ambient night time light (moon & stars) without turning on the Illuminator?

Yes, this will work with ambient moon and star light. The amount of that ambient light will determine whether or not you still need the IR illuminator.

Is the IR850 illuminator that comes with it the same as the IR850 that you sell separately that is said to be a "Pro, long range" model?

The one that comes with it is good for roughly 100 yds.
The Pro model is good for roughly 300 yds.
I own both and this has been my experience with these. Note: I am very pleased w/ mine.
I to am a hunter so I can vouch for this answer.

There is not a list of suggested firearms to go with the Opmod ATN X-Sight, but there are a number of reviews and comments from folks using heavy recoil firearms like the .338 Lupua Magnum successfully.
