The Unity Tactical Optics Riser Platform will raise the centerline height of your optic by 0.7".

Will this bring the Holosun 510c up to the 2.26 centerline height?

The Unity Tactical Optics Riser with the 510c would not bring it to the 2.26 centerline. Only optics with a lower 1/3 will be at the 2.26 centerline. The 510c comes with an absolute cowitness mount.

I have the UnityFastMount/OMNI combo with the Vortex UH-1 Gen2 and 3xMag. When magnifier is down it blocks the lower 1/4" of my UH-1. Is this normal?

Yes, the Unity Tactical Optics Riser Platform will fit your Eotech 518 and allow you to achieve a 2.26" centerline height. Your battery compartment will overhang from the riser.

The Unity Tactical Optics Riser Platform will only provide 2.50" of rail space and would not be able to fit both the AEMS and HM3XT on the riser.

If ran an XPS2 (absolute) with this mount, can you still run back up irons and have them be in the sight picture?

The Unity Tactical Optics Riser Platform will bring an absolute co-witness sight to about 2.06" for a centerline height. So the iron sights will most likely not be in the sight picture if you have standard height AR sights.

The Unity Tactical Optics Riser Platform is designed to lift lower 1/3 optics to a 2.26" centerline. The XPS-2 uses an absolute co-witness mount, not lower 1/3, and while it will still work compatibility with the FAST FTC Magnifier Mount will be limited.

I have a 1-6 lpvo sitting in an AD cantilever mount 1.5". Will this riser work with that setup to raise the height?

The Unity Tactical Optics Riser Platform could be used to raise the cantilever mount you are using. However, this may cause issues with accuracy of the LPVO you are using. I recommend getting a higher cantilever mount if you want to raise up your optic.
