Will this work for the AR10 Stag Arms in a 6.5 Creedmoor? Will the charging handle interfere with the cheek rest when fully extended?

It will mount to the gun, and should only interfere with the charging handle if you adjust it too far forward.

I like to look of this better that the 15 model will this work with an ar-15?

The 15 model is the exact same thing aesthetically as this model. This model is not recommend for an AR-15 as it clearly states its for an AR-10. The AR-15 is the recommended model for an AR-15 and has the same features and look as the AR-10 model.
