That will depend on your rifle, but the medium option should work for most bolt action rifles.

for the low mount, is it 'absolute cowitness'? (so it can be lined up with my existing red dot) Expert Answer

No, it is a 1.1" base to centerline height. MPN: SM34002 would be a more appropriate height with a base to centerline height of 1.4".
